



DUALITY is a product of a dual fermentation; a light ale fermented with Voss Kveik yeast and Lactobacillus Plantarum bacteria. The yeast provides the bulk of the alcohol, whilst the bacteria creates the lactic acid for this sour’s signature tartness. 60kg of British blackberry purée was added to the fermenter, as well as 1kg of Atlantic sea salt. The result is a light yet complex sour, brim full of juicy berry flavours, as well as a spiky sourness that is rounded off with a delicate saline finish.
AGUACATONES is the name of the farm where the beans were grown. Our friends at PLOT love to champion the small-hold farmers they buy the beans directly from by naming their coffees after the farmers, and so we thought it fitting to carry this forward with the name of our collaboration beer. Aguacatones farm in Guatemala started off life as an avocado farm, and is currently run by the Morales family.
Our exploratory tastings with the team at PLOT helped us to realise how seriously they take their coffee, and also how the right bean could bring our coffee stout to the next level. The beer is brewed with a wide array of malts; roasted malts for colour and rich flavour, crystal malt for sticky sweetness and a red hue, oats for body and roundness, and maris otter as a solid canvas. 15kg of cold brewed coffee were added to the fermenter once the beer was conditioning. At 5.5% abv gives the beer a strong and hearty body, round and silky but packed with flavour.
Both beers are unfiltered with a natural haze (meaning they are suitable for vegans) and best enjoyed when stored cold and drunk as fresh as possible.
